There's nothing like tender, fresh shoots of locally grown asparagus to enliven an entree, side dish, soup base or bbq.

Here's a little insight about this spring delicacy!  Asparagus plants take about four years to establish due to root systems that stretch 10 feet into the soil. Their deep rootedness means no watering is necessary until halfway through the harvest!  When the stems are 8-10 inches, they are cut & bundled, arriving at local markets the same day.   

Especially in Quincy, the sandy soil and climate are ideal for this spring treat. This year, Quincy harvest started April 15 and will continue for 6-8 weeks. Remember, it's perfectly fine to eat with your fingers.
